roasted squash & cherry tomato salad


This is my favorite salad, it reminds me of summer with the fresh basil and parsley.
1 zucchini
1 yellow squash (zucchini)
1 pint cherry or grape tomatoes
Dressing: mix in bowl
bunch of basil and parsley
1 minced garlic clove
1/4 cup olive oil
2 tbsps of balsamic vinegar
herbamare
Slice the zucchinis in rounds and the tomatoes in halves. Roast in oven for about 30 min or until tender. Can grill zucchini on bbq too but not tomatoes. Let cool and add dressing, serve at room temperature.
