1 can lentils, rinsed and drained
1/2 chopped red pepper
2 green onions chopped
minced garlic
olive oil
apple cider vinegar or red wine vinegar or white balsamic
bunch of parsley or cilantro
herbamare
crumbled goat cheese
That's it!!
Add ins: chopped dates, or cranberries and walnuts or pine nuts for extra sweetness and crunch!
